How a batch is identified and followed from reception through to dispatch documentation.

Traceability is the ability to establish, for any carton leaving the plant, what it contains, when it was produced and from which incoming batch — and to work in the opposite direction when a question arises.

The stages shown in the traceability diagram on this site are drawn from the content management system and reflect only the steps this operation performs and has verified. Where a stage sits with a supplier rather than with Cárnicas de la Litera, it is described as such rather than being absorbed into the company's own process.

This section will describe batch identification and coding, the records kept at each control point, how a batch is reconstructed during an investigation, and what traceability information accompanies a shipment. Sample data journeys are illustrative and never expose customer or supplier information.
